Liz's Tomato Soup

 This recipe is from a dear family friend,
one that has known me since I was a babe 
and she is kindly letting me share it with y'all today!

Where to even start with this soup?
Let's just get it out of the way, this is a soup for the soul
not for the calorie counter ;)

It's my go-to meal when I'm volunteered for a meal rotation,
my boys inhale it,
people have hounded me from states away for the recipe,
and when all else feels upside down,
this soup takes me back home. 

Make it before Spring arrives.
I promise you,
you'll be amazed by the simplicity of the ingredients
and the power packed flavor of this humble little soup.
 Ingredients:
2 cans (the really big ones) of Hunt's tomato soup
1 quart of whole milk
1 stick of butter
1/2 cup of flour
1 tablespoon better than bullion paste
garlic salt
onion powder
black pepper

1 box of pastini or mini star noodles
1 cup parmesan
parsley
garlic powder

In a large pot melt the butter. When bubbly but not browned add the flour and whisk together. It should be a thick paste consistency. Cook over medium heat for 1 minute. Slowly add the tomato sauce and continue to whisk till smooth. Add the milk, again whisking till blended. Next add the bullion, and at least 2 dashes of each of the seasonings. I like to add a lot more pepper. Pour in one cup of water and let simmer on the lowest temp possible until ready to serve.

Meanwhile, cook the pastini as suggested on the box. Drain and toss immediately with the parmesan cheese, garlic powder and parsley.

To serve, fill each bowl and top off with the noodle mixture. Oh my!

I doubled this recipe last weekend for a baby shower and was able to serve 16 with some leftovers for Mr. Doozie. It's a crowd pleaser for sure!
